1 lb hot Italian sausage
4 packets fresh udon noodles
3 celery stalks (chopped into large pieces)
1 medium carrot (peeled and chopped into large pieces)
1 yellow onion (chopped into large pieces)
1/2 cup umami mushroom blend (or substitute with baby Bella, oyster, and shiitake mushrooms)
2 tbsp butter
10 cloves garlic
Salt and pepper to taste
4 cups chicken broth or stock
1 tbsp Mirin
Soy sauce to taste
1 tsp MSG (optional)
Soft-boiled eggs for serving
Chili oil (necessary for flavor)
Lime juice for garnish
Instructions:
Sauté hot Italian sausage until crispy.
In the same pan, sauté chopped onion, celery, carrot, garlic, and mushrooms until fragrant.
Season with salt and pepper; let the flavors meld together.

Cook udon noodles separately according to package instructions.
