Pork Tenderloin with Apple Onion Slaw, Dijon Pan Sauce & Roasted Potatoes
Easily substitute the pork for chicken if that's your vibe ❤️
This one’s part of the plan because it hits that sweet spot: minimal effort, full dinner. Roasted potatoes go in the oven first, pork gets seared and finished in the same pan, and the slaw comes together in a bowl while everything cooks.
The pan sauce is quick and uses what’s already in the skillet; Dijon, broth, a little butter. It adds just enough without making things over complicated.
The apple onion slaw adds some crunch and acidity to balance everything out. It’s not extra, it’s there for a reason.
Leftovers hold up well too, especially the pork and potatoes.
